Whilst perfect for duck confit, duck marylands are more versatile than you might think. Try them roasted in a hot oven or as a welcome change to Sunday ragu. You will be impressed and the depth of flavour that duck can bring to any dish that calls for chicken. A duck maryland is the thigh and the drumstick, bone-in, in one piece. They are approximately 250g each.
Our ducks are from Game Farm. They are raised in large barns with plenty of access to sunlight and space to roam and socialise. They are fed a varied diet consisting of veggies & grains and are free of hormone growth promotants.
