Pork scotch fillet (also known as pork neck) is a heavily marbled cut that lies next to the pork shoulder. It’s best cooked slowly as a roast which lets the escaping fat kiss the meat, keeping it extremely moist. Excellent value for making pulled pork; a great cut for entertaining. You’ll need about 200 grams of cooked weight per person. Keep in mind that when slow-cooked it can shrink by 20-30%.
