Pork chops are cut from the saddle; the strip that runs from the hip to shoulder. They are pork loin on the bone. Delicious for grilling on the BBQ. Depending on where they originate, pork chops can be found under a variety of names, including loin, rib, sirloin, top loin and blade chops. Ours come with the skin on which puffs up into crackling when cooked on a high heat.
