If you’ve never made bolognese with mince made by an independent butcher, we implore you to give it a go. We use chuck, topside and trimmed brisket with a low fat content to make a top quality mince. Ours is about 90% meat to 10% fat. Great for burgers, tacos, cottage pie, Bolognese; whatever you can dream of really. Freezes extremely well. 1kg feeds about 4 people.
